Greetings. In observance of good nutrition, daughter-in-law Nancy gave me this recipe for some really good, healthy muffins. You might like to try these as a fast breakfast treat when you run out the door heading for work.
Bran Flax Muffins
1 1 /2 cups white bleached all purpose flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 teaspoons baking soda
I teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 1/2 cups carrots, shredded
2 apples peeled and shredded
1/2 cup raisins
1 cup nuts, chopped
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla extract
In a large bowl, mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Stir in carrots, apples, raisins and nuts.
In a small bowl, combine milk, eggs, and vanilla. Pour liquid ingredients into dry ingredients Stir until all ingredients are moistened, but do not over mix. Fill 12 muffins cups 3/4 full. Bake at 350 degrees for 15 to 20 minutes, or until a toothpick inserted in center of muffin comes out clean.
