Cranberry Nut Bread

Cranberry Nut Bread

2 ½ c. flour

1 c. sugar

3 ½ tsp. baking powder

1 tsp. salt

3 Tbsp. salad oil

½ c. milk

¾ c. orange juice

1 egg

4 tsp. grated orange peel

1 c. Alaska cranberries (frozen)

1 c. coarsely chopped pecans

Heat oven to 350 degrees. Grease and flour 9 x5 x 3-inch loaf pan. Measure all ingredients, except cranberries and nuts into large mixer bowl. Beat on medium speed ½ minute, scraping side and bottom of bowl constantly. Gently stir in cranberries and nuts. Pour into pan. Bake 65 minutes or until wooden pick inserted in center comes out clean. Remove from pan onto wire rack; cool completely before slicing.
