Greetings. Hope you all had a wonderful week. The following recipe was one I used many years ago when a group of used to come together bringing a dessert, usually cookies, and the recipe. It was fun. We shared good friendship and good food. Enjoy!
Coconut Bars
Crust:
1/2 pound butter (2 sticks), melted
2 cups flour
1 cup brown sugar, packed
Filling:
1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon mace
2 cups brown sugar, packed
4 eggs
2 cups sweetened coconut flakes
2 cups walnuts, chopped
Crust: Preheat oven to 375 degrees. Combine flour and sugar. Add melted butter and mix well. Press into an ungreased 9 x 13 inch baking pan. Bake for 15 minutes and remove to cool slightly while preparing filling.
Filling: In a large bowl combine flour, baking powder, salt, mace and brown sugar. Add eggs, one at a time, mixing well. Fold in coconut and nuts. Pour filling into crust, spreading evenly, and return to oven. Bake for another 25 to 30 minutes until firm. Cool and cut into 40 bars.
