Sweet Berry Blueberry Cobbler

Greetings. Here is a recipe that will bring on thoughts of sunshine and fish camp. It calls for tundra blueberries but you can also substitute raspberries or blackberries or other fruit without much alteration; simply use about the same quantity of fruit sweetened to your taste and another teaspoon of cornstarch if your fruit is juicier than the blueberries.
Blueberry Cobbler
Filling
4 cups fresh blueberries (or 24 ounces frozen)
2 teaspoons cornstarch
¾ cups sugar or 1 cup if using Tundra blueberries
½ teaspoon cinnamon
1 teaspoon vanilla
Combine all ingredients in a bowl and set aside while topping is being prepared.
Shortcake Topping
1 cup flour, all purpose
1 1/2 teaspoons baking powder
¼ teaspoon salt
6 tablespoons cold butter, cut into pieces
7 tablespoons milk
1 tablespoon sugar to be sprinkled over the top
Preheat oven to 375˚F. Mix together flour, baking powder and salt in the work bowl of a food processor. Scatter butter pieces over mixture, tossing to coat butter with dry ingredients. Pulse several times until flour looks like yellow cornmeal. Turn mixture into large bowl and pour 6 tablespoons of milk over. Mix together with a large spoon or spatula until large clumps form. Turn mixture onto a lightly floured work surface and knead lightly just until mixture sticks together. Place dough between two sheets of plastic wrap and press out to the size of pan you will be using. Note: One may cut the butter into flour using a pastry cutter or two knives if a food processor is not available.
Pour fruit mixture into an 9-inch square pan or a 9-inch deep dish pie pan. Using a rolling pin, roll dough to about 1 inch larger than pan and place over the fruit mixture. Tuck the excess dough inside the pan. Brush topping with remaining tablespoon of milk and sprinkle sugar over. Cut 4 or 5 two-inch vent holes in the topping and bake for about 50 or 55 minutes until golden brown. Serve warm.
This cobbler will warm the cockles of your heart. It’s been said that grown men have been known to cry upon tasting this culinary delight. So, ladies, or gentlemen, if you wish to attract the apple of your eye, serve this blueberry cobber.
