Greetings. Can you believe how hot it was last week? It was 80˚F last Sunday. We are due for some cooler weather this week, thank goodness. Here is a cake recipe for you that will most certainly get rave reviews and it is very easy to make. This recipe comes from Terry Bissonette, who is a great cook. My daughter-in-law Nancy tested it out for us a few years back and she confirmed it “good and simple”.
Chocolate Crazy Cake
3 cups flour
2 cups sugar
2 cups cold water
2 teaspoons salt
6 rounded tablespoons cocoa, about 2/3rd cup
2 teaspoons vinegar
2 teaspoons vanilla
2/3 cup oil
Combine all ingredients in a large mixing bowl and beat well, about three minute at high speed. Pour in a greased and floured 9-inch by 13-inch by 2-inch pan. Bake at 350˚F for 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool and dust with powdered sugar or frost with the following frosting.
Chocolate Frosting
8 ounce package cream cheese, softened
8 tablespoons butter, softened
3 cups powdered sugar
4 tablespoons cocoa
2 tablespoons milk
Cream together butter and cream cheese. Mix together powdered sugar and cocoa; add to creamed mixture along with enough milk to make frosting spreadable. Beat at high speed until well mixed. Frost the cooled Crazy Cake and enjoy.
