Greetings! Happy K300 week. I hope everyone will enjoy the race festivities. In celebration of this event, I have another good recipe for you. It’s a recipe called Supreme Seafood from Grandma Shirley Schanke. Shirley is a terrific cook and I’m sure you will love this dish.
Seafood Supreme
4 tablespoons chopped onion
4 tablespoons chopped green pepper
2/3 cups chopped celery
2 cups cooked rice
1 cup raw shrimp, diced in chunks
1 cup crab meat, flaked (she uses imitation crab)
2/3 cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
½ teaspoon salt
Dash of pepper
½ cup buttered bread crumbs
Paprika for sprinkling
In a large bowl, combine mayonnaise, Worcestershire sauce, lemon juice, salt and pepper. Mix well. To this bowl add remaining ingredients except breadcrumbs and paprika. Mix well. Turn into a buttered 9” x 13” casserole dish; top with buttered bread crumbs and sprinkle with paprika. Bake at 375˚F for 30-40 minutes. This dish may be made up to a day before, refrigerated and then baked about 45 minutes before ready to serve. Makes 4-5 servings. Enjoy!
