A Chocolate Cake recipe too easy to believe

Greetings! Congratulations to all the mushers who raced this past weekend. Yikes! It was so cold! Hopefully it will warm up a bit.

To the kitchen. Here’s a cake recipe from Helen Crowell. She was a nurse here in Bethel many years back. This cake is named after Los Gatos, which is where Helen lived, south of San Jose. She got this recipe from her grandmother Anne. It is so easy you won’t believe it.

Los Gatos Kahlua Cake

1 package chocolate cake mix (super moist)

1 small 4 oz. package instant vanilla pudding mix

1 16 oz. carton sour cream

4 eggs

¾ cup oil

2/3 cup Kahlua or strong black coffee

12 oz. chocolate chips

Mix all ingredients except chocolate chips. When well blended, fold in chocolate chips. Pour into a greased bundt pan. Bake at 350 ˚F degrees for 55 minutes or until done (inserted toothpick comes out clean).

Helen served this with lightly sweetened whipped cream. Yum! It is the best chocolate cake you will ever eat, some will say. Until next week, dear Reader, vaya con Dios.
