Tasty Quick Chocolate Cake

by Millie Bentley

Greetings. My friend Katie from Bemidji, Minn. shared this recipe with us back in 2000. Back then she was a newcomer to Bethel. She is also a really good cook. She made this cake for a birthday and agreed to share the recipe with us. It meets our KISS (Keep It Simple Sweetheart) criteria.
Katie’s Quick Chocolate Cake
3 cups flour
2 cups sugar
6 tablespoons cocoa
1 cup oil
1 teaspoon salt
2 cups cold water
2 tablespoons apple cider vinegar
2 teaspoons baking soda
1 teaspoon vanilla
Put everything in a bowl and beat. Grease and flour a 9-by-13 inch baking pan. Pour batter into the pan evenly. Bake 40 to 50 minutes at 350 degrees. Katie said one may serve this cake plain, with powdered sugar, with store-bought frosting, with whipped cream, or with ice cream. (When testing this recipe, we found that all of those things work. Hah!)
Until next week, dear Amigos, vaya con Dios.
