Pumpkin Cake Dessert

by Millie Bentley

Greetings. Here is a tasty dessert that guests have said was better than pumpkin pie. It is a recipe from my friend Marie. It meets our KISS criteria – Keep It Simple Sweetheart. Start to finish this takes only five minutes to put together, very few ingredients, and one hour bake time. Yum!
Pumpkin Cake Dessert
1 30 oz. can pumpkin pie mix
2 eggs
2/3 cup of carnation evaporated milk
1 box cake mix either yellow or white
1 ½ sticks of butter or margarine
1 cup of nuts (chopped fine)
Preheat oven to 350˚F. Grease a 9-by-13 inch pan. In a mixing bowl, mix pumpkin pie mix according to directions with two eggs and 2/3 cups of Carnation milk. Turn into prepared pan and cover with entire box of dry cake mix. Melt 1 ½ sticks of butter or margarine and drizzle evenly over dry cake mix. Cover with chopped pecans or walnuts. Bake at 350˚F for 55 to 60 minutes or until done (toothpick inserted in center comes out clean). Cool and serve with whipped cream.
We hope you like it. Until next week, dear Reader, vaya con Dios.
